My family gets together on Sunday evenings for dinner quite a bit and most of the time we have a pot luck type meal. In other words each of us women brings a dish to share. Since my sister-in-law is a vegetarian, I try to bring something she can eat as well. Bean dishes seem like a good idea since they have quite a bit of protein in them. This past weekend I made some vegetarian boston baked beans that turned out great.
When I started looking for different bean recipes, I was surprised how many of them had some sort of meat or animal fat in them. I guess it is needed for flavor. Since then I’ve come across a couple of vegetarian recipes websites that have some good ideas and I’ve even modified some recipes and used olive oil or vegetable bullion and various seasonings to make the dish vegetarian. It’s a lot of fun to try different recipes and make all these delicious bean dishes. I know my sister-in-law appreciates the extra meal choice for her and the rest of the family seems to enjoy them as well.
